  • 3 cloves garlic
  • 3 leeks
  • 250g chestnut mushrooms
  • 300g white mushrooms
  • 1l vegetable stock
  • half tub creme fraiche
  • 3 sprigs thyme

    Method

    • step 1

      Chop the garlic, thyme, leeks and mushrooms.
    • step 2

      Sweat the leeks for 5 minutes.
    • step 3

      Add the garlic and fry for a minute.
    • step 4

      Add the mushrooms and thyme and cook for 3 minutes.
    • step 5

      Add the stock and simmer for 5 minutes.
    • step 6

      Allow to cool, stir in creme fraiche then blend.

    I had all the ingredients except creme fraiche so went ahead anyway. It is very quick and easy to prepare and is very tasty in its light version. I tried adding kefir, but think its strong flavour distracted from the garlic, leek, mushroom and thyme taste. I used olive oil to fry the ingredients,…
