• Greek feta cheese
  • 2 eggs
  • half a red onion
  • 2 small tomatoes
  • 2 green chillies
  • cucumber
  • corriander few leaves
  • olives handful
  • honey 1 tea spoon
  • 1 table spoon water
  • mustard seeds pinch
  • salt
  • black pepper


  • STEP 1
    Chop the red onion, 1 tomatoe, green chillies in small cubes. Put aside. Chop the cucumber, 1 tomatoe and place in a bowl add the corriander in tiny pieces over the top, add the olives in. For the dressing mix honey, pinch of salt, water, pinch of mustard seeds in a small bowl, mix together leave to set aside. Whisk 2 eggs in a bowl. chop a small amount of feta cheese and keep aside.
  • STEP 2
    Place a small amount of olive oil on a frying pan on full heat, when slightly warm put on medium, add the whisked egg around the pan. Allow the bottom to fully cook before turning. turn and cook other side then take off the pan place in to a plate. Add another drizzle of olive oil on the pan, when slightly warm put in the onion mix and cook for a few minutes. Take off and place on top of half of the egg. add salt and black pepper for tast. sprinkle the feta on top of the onion mix and fold half of the egg on top of the onion mix. place the cucumber salad mix next to the omlette in the plate, drizzle the honey and mustard dressing on top of the salad. Enjoy
