Chocolate Mayonaise Cake

Some people may turn their nose up when you say 'have a slice of Mayonaise Cake' but once they've tasted it they will change their opinion. A deliciously rich cake, ideal for special occasions or just as a treat.

  • 10 zo (285g) self raising flour
  • 8oz (225g) sugar
  • 1 1/2 teaspoon baking powder
  • 7oz (200g) mayonaise
  • 4 tablespoons cocoa powder
  • 8 floz boiling water
  • 1 teaspoon vanilla essence
  • for the icing
  • 1 tub of Betty Crocker ready mix chocoalte frosting
  • ---- or ----
  • 2 teaspoons instant coffee
  • 2 tablespoons cocoa powder
  • 2 tablespoons hot water
  • 3oz (85g) soft margarine/butter
  • 8 oz (225g) sifted icing sugar


    1. Mix flour, sugar, baking powder & mayonaise. This is best done by an electric food mixer to ensure the mixture is throughly mixed.
    2. Dissolve the cocoa in the boiling water & stir into the mixture along with the essence until throughly blended.
    3. Place the mixture into a 7 inch greased & lined cake tin.
    4. Bake at gas mark 4/ 180C/ 350F for 30 - 40 minutes. Test with a skewer.
    5. cool in the tin before removing.
    6. For the icing - If you are using Betty Crocker ready mix chocolate frosting go straight to step 9.
    7. Dissolve the coffee & cocoa in the hot water.
    8. Cream together the margarine/butter & icing sugar. Beat in the cocoa liquid.
    9. Spread over the top & sides.

Olga, I'm not sure if the cake is freezable. I would prefer not to, but I will get back to you if, because of the ingredients its not wise to freeze.

I love this cake it's delicious very moist. I used extra light mayo so less calories which is really good.

Do you think you can freeze this cake before frosting??

i too have this recipe and we all love it, just to make it even better I use extra light mayonnaise now it is available so there is no excuse not to eat it is there!

Hi guys, apologies! but I'm new & jsut finding my way round. Hope this is how I rely ? I thought I had entered the amounts of ingredients .... 10 oz (285g) self raising flour, 8oz (225g) sugar, 7oz (200g) mayonaise. fFor the icing - 3oz (85g) margarine/butter, 8 oz (225g) icing sugar. I only have ingredients in ounces & I used the sites converter to change them & I think this is why they don't show. I'll give it another go. Thanks for letting me know. Hope you try the recipe. Enjoy x

Hi Tracy. I've made this cake numerous times and it always.successful. Every time our son comes out for holidays I make it It also keeps very well I originally got the recipe on Blue Peter, more years ago than I care to remember Saluti Eleanora xx
