A delicious and almost healthy seed and fruit flapjack

  • 80g butter
  • 80g soft brown or golden caster sugar
  • 2 tbsp honey
  • 150g rolled oats
  • 80-100g mixed seeds and dried fruit
  • (I use rasins, chopped apricots and sunflower, pumpkin and sesame seeds)
  • 20cm brownie tin


    1. grease and line the tin and preheat oven to 180C/gas 4
    2. melt the butter, sugar and honey in a pan over a low heat until combined
    3. remove from the heat and stir in the oats and seeds/fruit
    4. press into the prepared tin and bake for around 20-25 minutes until golden on top
    5. allow to cool and cut into slices
