My Mums Orange Pud

Light sponge on top and gooey custard underneath. A good palette cleanser after a meal. Nice and light not to calorific. Try it with other juices


  • 50g Butter
  • 200g Caster Sugar
  • Zest of 1 Orange
  • 100ml Orange juice
  • 3 eggs separated
  • 50g Plain Flour
  • 250ml Milk


  • STEP 1
    Heat the oven to 180c
  • STEP 2
    Beat together butter, sugar and zest.
  • STEP 3
    One at a time add juice, egg yolks, flour and milk mix until you have a smooth batter
  • STEP 4
    Whisk the egg whites until stiff, fold into batter, gently with a metal spoon.
  • STEP 5
    Pour batter into 4 or 6 depending on size, greased dishes and bake in a baking tray filled with enough hot water to come half way up the outside of the dishes.
  • STEP 6
    Bake for 25-30 minutes until lightly browned and set.
