Method

  • step 1

    Slice the baguette into 24 rounds, drizzle with olive oil and grill until toasted either side, then leave to cool
  • step 2

    Thinly slice the red pepper and fry for 2 minutes until soft
  • step 3

    Separate the Shiro Shimeji and fry in a little olive oil for 4 minutes until soft
  • step 4

    Slice the brie into 24 slices, then top the bread with it. Grill for 2 minutes until the cheese begins to melt
  • step 5

    Top the crostini's with the red peppers and the Shiro Shimeji
