Bacon, Eggs & Exotic Mushrooms

Ingredients
- 1 X 500g Livesey Bros Sumo Pack
- 20g Butter
- 1tbsp Chopped Parsley
- 6/8 Free Range Eggs (6 if large, 8 if medium)
- 2tbsp Double Cream
- 8 Rashers of Bacon
- Salt & Pepper (seasoning)
Method
- STEP 1Melt half of the butter in a frying pan over a high heat, when hot fry the mushrooms for 3 minutes until softened, then remove from the pan, and put into a bowl with the chopped parsley
- STEP 2- meanwhile grill the bacon for 5 minutes either side
- STEP 3Whisk the eggs in a bowl along with the seasoning and the cream
- STEP 4Melt the remaining butter in a pan over a medium heat, and add the egg mixture- stir continuously until they are scrambled
- STEP 5Serve the eggs on a plate, topped with the grilled bacon, then spread the mushrooms around the pile of eggs and bacon
