Ingredients

  • 1 X 500g Livesey Bros Sumo Pack
  • 20g Butter
  • 1tbsp Chopped Parsley
  • 6/8 Free Range Eggs (6 if large, 8 if medium)
  • 2tbsp Double Cream
  • 8 Rashers of Bacon
  • Salt & Pepper (seasoning)

Method

  • STEP 1
    Melt half of the butter in a frying pan over a high heat, when hot fry the mushrooms for 3 minutes until softened, then remove from the pan, and put into a bowl with the chopped parsley
  • STEP 2
    - meanwhile grill the bacon for 5 minutes either side
  • STEP 3
    Whisk the eggs in a bowl along with the seasoning and the cream
  • STEP 4
    Melt the remaining butter in a pan over a medium heat, and add the egg mixture- stir continuously until they are scrambled
  • STEP 5
    Serve the eggs on a plate, topped with the grilled bacon, then spread the mushrooms around the pile of eggs and bacon
