moist apple cake

  • 175g softened butter
  • 175g brown sugar
  • 150g mixed dried fruit
  • half tsp bicarbonate of soda
  • half cup of stewed apple
  • 250g plain flour
  • half tsp mixed spice
  • half cup cider


    1. beat sugar and butter until soft and creamy. Add mixed fruit
    2. mix bicarbonate with cider quickly add to stewed apple
    3. mix into the butter and fruit mixture
    4. sieve in plain flour and mixed spice
    5. Put into 7in tin, bake for 1 half hours at gas mk 3 , 170c, 325f until firm
