Ingredients

  • 175g softened butter
  • 175g brown sugar
  • 150g mixed dried fruit
  • half tsp bicarbonate of soda
  • half cup of stewed apple
  • 250g plain flour
  • half tsp mixed spice
  • half cup cider

Method

  • STEP 1
    beat sugar and butter until soft and creamy.
  • STEP 2
    Add mixed fruit
  • STEP 3
    mix bicarbonate with cider quickly add to stewed apple
  • STEP 4
    mix into the butter and fruit mixture
  • STEP 5
    sieve in plain flour and mixed spice
  • STEP 6
    Put into 7in tin, bake for 1 half hours at gas mk 3 , 170c, 325f until firm
