
Tuna stuffed cherry peppers

- 10 Cherry peppers
- 1 slice of fresh tuna
- 1/4 litre good olive oil
- white wine vinegar
Method
step 1
Carefully cut the tops off the cherry peppers and deseed. Discard the seeds and topsstep 2
Marinate the peppers in white wine vinegar for 24 hoursstep 3
Wash the peppers and blanch in boiling water for a minute or sostep 4
Flash fry the tuna steak in until it is just cooked through. Cut into small squares and stuff each pepperstep 5
Pour the oil over all the peppers ensuring each is covered. Either seal in a jar or serve fresh
