Cherry peppers and tuna under oil

  • Ingredients
  • 10 Cherry peppers
  • 1 slice of fresh tuna
  • 1/4 litre good olive oil
  • white wine vinegar


    1. Carefully cut the tops off the cherry peppers and deseed. Discard the seeds and tops
    2. Marinate the peppers in white wine vinegar for 24 hours
    3. Wash the peppers and blanch in boiling water for a minute or so
    4. Flash fry the tuna steak in until it is just cooked through. Cut into small squares and stuff each pepper
    5. Pour the oil over all the peppers ensuring each is covered. Either seal in a jar or serve fresh
