Ingredients
Wet Ingredients
- 1 large egg, lightly beaten
- 1/4 cup (60 ml) molasses
- 1 teaspoon pure vanilla extract
- 2 tablespoons canola oil
- 1.25 cup (300 ml) milk
Dry Ingredients

- 1.25 cup (300 ml) milk
- 1 cup (130 grams) whole wheat flour
- 1 cup (150 grams) oat bran
- 1/3 cup (75 grams) light brown sugar
- 1.5 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 1 teaspoon grated orange zest
- 1/2 cup (70 grams) dates (can be raisins)
Method
- STEP 1Preheat oven to 400 degrees F (200 degrees C) and spray or line 12 cup muffin pan.
- STEP 2Mix firsts 8 dry ingredients in a large bowl (flour, oat bran, baking soda, baking powder, salt, cinnamon, brown sugar, orange zest). Leave the dates until later.
- STEP 3In another bowl whisk together the wet ingredients (beaten egg, molasses, vanilla extract, oil, and milk).
- STEP 4Add the wet ingredients to the dry ingredients. Stir only until combined.
- STEP 5Gently stir in dates (these will drop to the bottom of the muffins as batter is quite thin)
- STEP 6Spoon or ladle the batter into the muffin cups. Bake 18 to 20 minutes (until an inserted toothpick comes out clean). Remove from oven and cool on wire rack before serving.
