Banana Crumb Muffins

Banana muffins for any occasion - perfect for lunch or as a desert with custard.


For the Muffin

  • 355 ml (1.5cups) plain flour
  • 5 ml (1 tsp) baking soda
  • 5 ml (1 tsp) baking powder
  • 2 ml (1/2 tsp) salt
  • 3 large ripe bananas (mashed)
  • 177 ml (3/4 cup) sugar
  • 1 whole egg lightly beaten
  • 78 ml (1/3 cup) butter (melted)

For the topping

  • 78 ml (1/3 cup) brown sugar
  • 15 ml (2 tbsp) plain flour
  • 15 ml (1 tablespoon) butter


  • STEP 1
    Pre heat oven to 190c
  • STEP 2
    Grease a muffin tin with butter
  • STEP 3
    Combine all of the muffin ingredients in a bowl and mix well - a food processor will also do a very good job
  • STEP 4
    Pour into the muffin tin until each well is 3/4 full
  • STEP 5
    Combine the sugar and flour for the topping in a separate bowl and cut in the butter until the mixture goes crumbly (like an apple crumble topping)
  • STEP 6
    Add the topping mixture to the top of each muffin
  • STEP 7
    Place in the over for 20 minutes or until golden brown
  • STEP 8
    Cool on a rack and then serve
