Prepare the mixture in a blender by adding all the masala ingredients

Heat the oil in a pan. Add the Cumin seeds, Mustard seeds and Bay leaf and saute for a minute.

Now add the masala and the the chopped fenugreek leaves and saute for until leaves are half cooked. Later on add the rice and water in 1:2 ratio and mix well.

Finally add the coconut powder, salt and lemon juice and mix properly. Close the lid and cook until the rice is done
