  • 150g margarine
  • 250g carrots
  • 200g sugar
  • 200g flour
  • 1.5tsp cinnamon
  • 2tsp baking powder
  • 2 large eggs
  • 125g sultanas
  • 50g nuts


  1. Preheat the oven to 200C/gas mark 6/fan 180C. Melt the margarine in the microwave.

  2. Top and tail, then peel and grate the carrots.

  3. Combine the carrots, sugar and margarine in a bowl.

  4. Sift in the flour, cinnamon and baking powder.

  5. Beat the eggs in a small bowl and then add to the mixture. Also mix in the nuts and sultanas.

  6. Line a muffin tray with 12 muffin cases and divide the mixture equally between them. Bake for 20 minutes.

Super super simple to make and really delicious. I cook a lot, trying various online recipes which don't always turn out as expected, but these were were perfect - moist and packed with flavor. The 5 yr old loves them.

Lovely simple recipe using everyday ingredients, works every time.Makes a tasty moist muffin.

I made this really is easy and tastes great. Substituted butter for margarine, but butter has to be soft.

Easy and great taste.. I used pecan nuts and added 1 tsp of sahlep.. dry powdered.. yummy
