Crushed Pesto Potatoes

Ingredients
- 750g new potatoes
- 4 tbsp creme fraiche
- 4 tbsp pesto
- salt and pepper
Method
- STEP 1Place the potatoes in boiling water and simmer gently for 12-15 minutes, until tender. Drain and place under cold running water.
- STEP 2In a large bowl, mix the pesto and creme fraiche together and season to taste.
- STEP 3Place the cooled potatoes in the mixture and mix and "crush" using a fork.
- STEP 4Put in the fridge for about 1 hour until chilled.
