Crushed Pesto Potatoes

  • 750g new potatoes
  • 4 tbsp creme fraiche
  • 4 tbsp pesto
  • salt and pepper


    1. Place the potatoes in boiling water and simmer gently for 12-15 minutes, until tender. Drain and place under cold running water.
    2. In a large bowl, mix the pesto and creme fraiche together and season to taste.
    3. Place the cooled potatoes in the mixture and mix and "crush" using a fork.
    4. Put in the fridge for about 1 hour until chilled.
