
Roasted Pepper Soup

Very simple but tasty low fat soup with is very healthy
Skip to ingredients
- 2 red peppers
- 1 small red onion
- 2 cloves of garlic
- 12 cherry tomatoes
- 1 tbsp vegetable oil
- 1 vegetable stock cube
- Crushed black pepper
- 570 ml boiling water
Method
step 1
Preheat oven to 180cstep 2
Chop peppers and onions into chunksstep 3
Place peppers, onions, garlic and tomatoes in baking tray. Drizzle with oil and roast in oven for 15 minsstep 4
Desolve stock cube into boiler waterstep 5
Mix all ingridients together and liquidise until smoothstep 6
Season to taste
