Roasted Pepper Soup

Ingredients
- 2 red peppers
- 1 small red onion
- 2 cloves of garlic
- 12 cherry tomatoes
- 1 tbsp vegetable oil
- 1 vegetable stock cube
- Crushed black pepper
- 570 ml boiling water
Method
- STEP 1Preheat oven to 180c
- STEP 2Chop peppers and onions into chunks
- STEP 3Place peppers, onions, garlic and tomatoes in baking tray. Drizzle with oil and roast in oven for 15 mins
- STEP 4Desolve stock cube into boiler water
- STEP 5Mix all ingridients together and liquidise until smooth
- STEP 6Season to taste
