  • 2 weetabix biscuits, crushed
  • 275ml milk
  • 1 large egg, beaten
  • 1 banana
  • 300g self-raising flour
  • 1 tsp mixed spice
  • 150g caster sugar
  • 150g raisins
  • 50g dried apricots
  • 50g glace cherries


  1. Preheat oven to 170c

  2. In a bowel, mix crushed weetabix with the milk. Add the egg and mix. Add the banana and smash into the mix.

  3. Mix in the flour, mixed spice and caster sugar.

  4. Add the rest of the ingridients.

  5. Butter a loaf tin and place grease proof paper on the bottom. Add the mixture. Cook for 90 minutes.

Enjoyed making and eating this, though really its more like a fruit loaf. I substituted the raisins, apricots and cherries for just 200g dried mixed fruit and it came out lovely. Couldn't really taste the banana, but I made this with my 2 year old daughter and she loved crushing the weetabix and mashing the banana so it was worth it for that :-)
