  • 8 ripe tomatoes
  • 2 tsp smoky paprika
  • 2 tsp worchester sauce
  • 2 tsp ground cumin
  • 2 tsp rock salt ( ordinary salt will do )
  • 2 tsp white wine vinegar
  • 2 tsp light brown sugar

    Method

    • step 1

      cut your tomatoes into quarters and remove the core, place in a pan along with the rest of the ingredients and bring to the boil. once boiling turn down to simmer for 10 minutes stirring occasionally. Remove from heat and leave to cool for 5 minutes then blitz in a blender. pass through a sieve and put into the fridge to cool.
