Mini Bacon, Onion & Cheese Quiches

Ingredients
- Oil
- 1 sheet puff pastry (I used chilled Just-Rol ready rolled)
- 3 Rashers bacon cut into small pieces
- 1/2 Onion finely chopped
- Grated cheese
- 3 Eggs
- 6 Tablespoons Milk
Method
- STEP 1Preheat oven to 180C
- STEP 2Lightly oil 16 holes of muffin/cupcake baking tray - you can use a pastry brush or just wipe it around lightly with a piece of kitchen roll if you don't have one
- STEP 3Put a small amount of oil in a frying pan and cook the chopped bacon and onion until lightly browned
- STEP 4Cut out circles of the puff pastry - they need to be just big enough to come up to the top of the baking tray holes A cookie cutter is ideal but you can also use cupcake/muffin cases as a guide
- STEP 5Place the pastry circles in each of the muffin/cupcake tray holes to form cup shapes
- STEP 6Spoon the bacon and onion mixture into the pastry cups
- STEP 7Place a pinch of grated cheese on top of each of the pastry cups
- STEP 8Whisk the milk and eggs together in a jug
- STEP 9Pour the egg and milk mixture into each of the pastry cups
- STEP 10Bake for 12-15 minutes or until lightly browned on top
