  • 7 Green Olives
  • 6 Eggs
  • 2 Onions (chopped)
  • 1tsp Garlic Paste
  • 3 Potatoes
  • Parsley (garnish)
  • 20ml Olive Oil
  • Saltto (taste)


  1. Wash and peel the potatoes, fry them in extra virgin olive oil until they are cooked over low heat (no colour to be obtained).

  2. Beat the eggs in a bowl add onions, add sliced Spanish olives, season them, pour it over potatoes in the pan.

  3. When the eggs starts coagulating take a plate to cover the pan and flip it and again cook over low heat. Garnish it with Parsley.
