Ingredients

  • 2 pinches of turmeric, cumin, thyme & black pepper
  • 2 eggs
  • 230g of cod
  • 160g of asparagus spears
  • Splash of vinegar

Method

  1. Pre-heat oven to 180c

  2. Place cod on foil and sprinkle over spices. Seal foil and bake for 15 - 20 minutes

  3. Poach the eggs with splash of vinegar for 6 minutes

  4. Blanch asparagus for 6 minutes

  5. Serve the asparagus to the side of the fish with the poached egg on top
