Ingredients

  • 2 pinches of turmeric, cumin, thyme & black pepper
  • 2 eggs
  • 230g of cod
  • 160g of asparagus spears
  • Splash of vinegar

Method

  • STEP 1
    Pre-heat oven to 180c
  • STEP 2
    Place cod on foil and sprinkle over spices. Seal foil and bake for 15 - 20 minutes
  • STEP 3
    Poach the eggs with splash of vinegar for 6 minutes
  • STEP 4
    Blanch asparagus for 6 minutes
  • STEP 5
    Serve the asparagus to the side of the fish with the poached egg on top
