  • 250g Cous cous
  • 300g Cherry tomatoes
  • 2 Courgettes
  • 2 Red onions
  • Small can of chickpeas
  • Juice of one lemon
  • Mixed herbs
  • Chicken or vegetable stock
  • Vegetable oil
  • 1 garlic bulb
  • salt and pepper


  1. Preheat oven at 190 degrees.

  2. Chop all the vegetable and place them in a roasting tray. Sqeeze the lemon,scatter the herbs,and drizzle the vegetable oil. Mix well so that everything is nicely coated. Place in the preheated oven and cook for 45min max.

  3. Meanwhile cook the cous cous according to the pack instructions.

  4. When the cous cous and vegetables are done mix them well together. Add salt and pepper to taste.
