Boiled fruit loaf recipe

- 1 oz butter
- 1 cup soft brown sugar
- 1cup dried fruit
- 1 cup black tea
- 1 tsp mixed spice
- 2 caps of brandy (optional)
- 2 cups self raising flour
- 1egg
- 1 cup = 1 tea cup / mug
Use same size cup / mug for all ingredients

Method
step 1
Measure fruit, mixed spice, butter, brandy and sugar and put in a saucepan add cup of black teastep 2
Gently bring to the boil and leave to cool for approx 20 minsstep 3
Turn oven to 170c / 180c and line a loaf tin with grease proof paperstep 4
Mix in flour and egg and transfer to baking tinstep 5
Put in centre of oven for approx 60 / 80 mins
