Cake

  • 4 medium eggs
  • 250 ml sugar
  • 200 gr butter
  • 200 ml extra strong coffee
  • 500 ml plain flour
  • 50 ml cocoa powder
  • 1 tbsp baking powder

Icing

  • 4 medium eggs
  • 250 ml sugar
  • 200 gr butter
  • 200 ml extra strong coffee
  • 500 ml plain flour
  • 50 ml cocoa powder
  • 1 tbsp baking powder
  • 75 gr butter
  • 75 ml extra strong coffee
  • 600 ml icing sugar
  • 50 ml cocoa powder
  • 1 tsp vanilla extract
  • Non-pareils

    Method

    • step 1

      Heat oven to 200C. Whisk eggs and sugar with an electric whisk until pale and fluffy. Melt butter in a pan and mix with the coffee, let cool slighlty.
    • step 2

      Mix the dry ingredients together and combine with the egg and sugar and the coffee mixtures, be careful not to over mix.
    • step 3

      Pour on a deep baking tray lined with baking paper. Bake for 15 mins or until a skewer inserted into the middle of the cake comes out clean. Let cool.
    • step 4

      Melt the butter in a pan, take off the heat and add the coffee. Add the dry ingredients through a sieve and mix until combined, make sure there are no lumps.
    • step 5

      Pour the icing over the cooled cake and spread evenly. Decorate with non-pareils and let the icing cool before cutting.
