Ingredients
Cake
- 4 medium eggs
- 250 ml sugar
- 200 gr butter
- 200 ml extra strong coffee
- 500 ml plain flour
- 50 ml cocoa powder
- 1 tbsp baking powder
Icing
- 4 medium eggs
- 250 ml sugar
- 200 gr butter
- 200 ml extra strong coffee
- 500 ml plain flour
- 50 ml cocoa powder
- 1 tbsp baking powder
- 75 gr butter
- 75 ml extra strong coffee
- 600 ml icing sugar
- 50 ml cocoa powder
- 1 tsp vanilla extract
- Non-pareils
Method
- STEP 1Heat oven to 200C. Whisk eggs and sugar with an electric whisk until pale and fluffy. Melt butter in a pan and mix with the coffee, let cool slighlty.
- STEP 2Mix the dry ingredients together and combine with the egg and sugar and the coffee mixtures, be careful not to over mix.
- STEP 3Pour on a deep baking tray lined with baking paper. Bake for 15 mins or until a skewer inserted into the middle of the cake comes out clean. Let cool.
- STEP 4Melt the butter in a pan, take off the heat and add the coffee. Add the dry ingredients through a sieve and mix until combined, make sure there are no lumps.
- STEP 5Pour the icing over the cooled cake and spread evenly. Decorate with non-pareils and let the icing cool before cutting.
