
Baked Easter Eggs

Ingredients
- 2 small red onions
- 2 tins of chopped tomatoes
- handful of basil
- 2 garlic cloves
- 1 small chili
- 4 eggs
- feta
- 2 tablespoons of black olives
- 2 teaspoons of tahini
Method
- STEP 1Dice up your red onion, garlic and chili and fry in your pan with a little oil until soft
- STEP 2add in the chopped tomatoes, olives, tahini and some of the torn up basil leaves and leave to simmer away until thicker (about 8 minutes)
- STEP 3transfer into your baking dish and make 4 dips in the sauce, attempt as best as possible to crack an egg into these
- STEP 4scatter the remaining basil leaves and crumble the feta on top
- STEP 5bake in the oven for about 8 minutes on a low heat
