  • 4 chicken breasts ,diced
  • 2 carrots,cut in to strips
  • 1 green pepper,cut into strips
  • 15oz can of pineapple chunks
  • 2 tbls peanut oil
  • 8oz tin of waterchestnuts
  • 4oz cashew nuts
  • 2 tbls dark soy sauce
  • 2 tbls dry sherry
  • 1 tbls malt vinegar
  • 1 tbls corn flour
  • 1/2 tsp ground ginger
  • seasoning


    1. cut chicken,carrots and green pepper into 1cm strips.drain pineapple and reserve juice.
    2. heat the peanut oil and fry the chicken for 5 mins then add carrot,pepper,pineapple,waterchestnuts and cashew nuts.stir fry for 5 mins.
    3. mix together soy sauce,sherry,vinegar and pineapple juice.blend in cornflour and ginger.pour the sauce over meat and vegetables,bring to the boil,stirring until thickened.
    4. cover and simmer for about 10mins.season with salt and pepper and serve with rice or noodles.
