Mum's recipe for sponge cake with cinnamon and coconut swirls

  • 50g butter
  • 100g brown sugar
  • 2 tbsp flour
  • 2 tsp cinnamon
  • 33g dessicated coconut


  • 170g sugar
  • 50g butter
  • 1 egg
  • 185ml milk
  • 225g flour
  • 2 tsp baking powder
  • Pinch of salt


  1. Filling Melt butter and mix all ingredients together.

  2. Cake Beat butter, sugar, egg and milk till well mixed.

  3. Add sifted dry ingredients

  4. Spread half of the cake batter in a greased ring mould. Sprinkle 2/3 of the filling over.

  5. Add rest of cake batter. Sprinkle over rest of the filling.

  6. Cook for 30-40min @ 180°C
