Ingredients
Pancake batter
- 1 cup of self-raising flour
- 1 egg
- 1 1/3 cups of milk
- 5 tsp sugar
Frying/decoration
- 1 cup of self-raising flour
- 1 egg
- 1 1/3 cups of milk
- 5 tsp sugar
- A small nob of butter to grease the frying pan
- Icing sugar
Method
- STEP 1Whisk the egg, sugar and half the milk (2/3 cup) in a bowl until smooth.
- STEP 2Add 1/2 the flour and whisk until smooth.
- STEP 3Add the rest of the milk and flour and beat until it is lump-free and has the consistency of double cream.
- STEP 4Put the butter into the pan and gently heat until it has melted.
- STEP 5Heat the pan on a high heat for about 15 seconds, spoon a couple tablespoons of batter onto the pan and reduce the heat to medium.
- STEP 6When the pancake starts to show bubbles rising through it gently in the middle, flip it over. It should be a golden brown. Cook for another 30ish seconds on the other side before plating up.
