Pancake batter

  • 1 cup of self-raising flour
  • 1 egg
  • 1 1/3 cups of milk
  • 5 tsp sugar


  • A small nob of butter to grease the frying pan
  • Icing sugar


  1. Whisk the egg, sugar and half the milk (2/3 cup) in a bowl until smooth.

  2. Add 1/2 the flour and whisk until smooth.

  3. Add the rest of the milk and flour and beat until it is lump-free and has the consistency of double cream.

  4. Put the butter into the pan and gently heat until it has melted.

  5. Heat the pan on a high heat for about 15 seconds, spoon a couple tablespoons of batter onto the pan and reduce the heat to medium.

  6. When the pancake starts to show bubbles rising through it gently in the middle, flip it over. It should be a golden brown. Cook for another 30ish seconds on the other side before plating up.
