Chicken wrapped in proscutio and cooked in a white wine and cream sauce

Ingredients

  • 2 Chicken Breasts
  • Proscutio
  • White Wine
  • Double Cream
  • Bay Leaves
  • 2o Butter

Method

  1. Flatten the chicken between grease proof paper with a rolling pin

  2. Attach slices of proscutio to one side of the chicken with cocktail sticks

  3. Coat the chicken with seasoned flour

  4. Add the butter to a skillet and then add the chicken and fry on both sides until the proscutio is crisp

  5. Remove the chicken and add the white wine. Reduce the wine to 1/3 of its original volume and then add the double cream and return the chicken to the pan and simmer for 10-20 minutes
