  • 4 (~250g) Baking Potatoes
  • 2 tablespoons butter, melted
  • Salt and Pepper to taste


  • 2 tablespoons finely grated cheese
  • 1 tablespoon breadcrumbs
  • 4 bacon rashers


  1. Preheat the oven to 220 C / Gas 7

  2. Make slices across the potato the short way about 3 to 6mm apart, making sure not to cut all the way through the potato. The slices should stay connected at the bottom

  3. Place on a baking tray and drizzle with half of the butter, then season with salt and pepper

  4. Bake for 35 to 40 minutes in the preheated oven

  5. While baking, chop the bacon into small strips and cook until crispy

  6. Remove the potatoes from the oven and drizzle with the remaining butter. Add the cheese, bacon and top with breadcrumbs and a little more seasoning if required

  7. Return to the oven for 20 minutes, or until golden brown.

this worked well, my son who usually moans at jacket potatoes wolfed it down. Part way through cooking I got them out the oven and fan them apart a bit a drizzled a bit more butter and seasoning, which encouraged them to fan out more and crisp on top while being soft inside. would be nice with sour cream on top too
