Potatoes

  • 4 (~250g) Baking Potatoes
  • 2 tablespoons butter, melted
  • Salt and Pepper to taste

Topping

  • 4 (~250g) Baking Potatoes
  • 2 tablespoons butter, melted
  • Salt and Pepper to taste
  • 2 tablespoons finely grated cheese
  • 1 tablespoon breadcrumbs
  • 4 bacon rashers

    Method

    • step 1

      Preheat the oven to 220 C / Gas 7
    • step 2

      Make slices across the potato the short way about 3 to 6mm apart, making sure not to cut all the way through the potato. The slices should stay connected at the bottom
    • step 3

      Place on a baking tray and drizzle with half of the butter, then season with salt and pepper
    • step 4

      Bake for 35 to 40 minutes in the preheated oven
    • step 5

      While baking, chop the bacon into small strips and cook until crispy
    • step 6

      Remove the potatoes from the oven and drizzle with the remaining butter. Add the cheese, bacon and top with breadcrumbs and a little more seasoning if required
    • step 7

      Return to the oven for 20 minutes, or until golden brown.

    this worked well, my son who usually moans at jacket potatoes wolfed it down. Part way through cooking I got them out the oven and fan them apart a bit a drizzled a bit more butter and seasoning, which encouraged them to fan out more and crisp on top while being soft inside. would be nice with sour…
