Ingredients

Cake Batter

  • 100g butter
  • 100g caster sugar
  • 2 eggs
  • 100g self-raising
  • 2 tbsp cocoa powder

butter icing

  • 100g butter
  • 100g caster sugar
  • 2 eggs
  • 100g self-raising
  • 2 tbsp cocoa powder
  • 100g butter
  • 200g icing sugar
  • 1 tbsp cocoa powder
  • 50g chocolate

Method

  • STEP 1
    Beat the butter and sugar together in a bowl until light and fluffy. And add the cocoa powder.
  • STEP 2
    Then add 1 egg and half the flour to prevent the mix from splitting, and mix in till fully incorporated. Then and the second lot of flour and the last egg.
  • STEP 3
    Mixing in the 2 tbsp of coco powder, and set your oven to gas mark 5 (190°C or 375°F).
  • STEP 4
    Place six muffin cases in the muffin tin and place 1 and half tbsp of the mixture in the case or until 3/4 full, otherwise if there is too much it will overflow.
  • STEP 5
    Then place them into the oven for 25 mins or until a skewer comes out clean from the middle of the cake.
  • STEP 6
    The next step to to make the butter icing. place the butter and some of the icing sugar int eh bowl with the coco powder and beat. is better if you use an electric mixer, but on a low setting.
  • STEP 7
    Now once the mixture is all mixed properly ad the next lot of icing sugar and mix.
  • STEP 8
    Once your cakes are cool spread or pipe (if you want to impress) the butter cream onto the cakes, and finally get a sharp knife and scrape the knife down it to create shaving, and sprinkle on the top.
