Coffee cupcakes with a choice of icings!

  • For the cupcakes
  • 100g Self-Raising flour
  • 115g Golden caster sugar
  • 40g butter
  • 50ml Milk
  • 1 tbsp instant coffee granules + 1 tbsp water
  • 1 egg
  • For Mascarpone icing
  • 250g Mascarpone
  • 42g golden caster sugar
  • 1 tbsp instant coffee granules + 1 tbsp water
  • For Coffee butter cream icing
  • 80g butter
  • 10ml milk
  • 1 tbsp spoon instant coffee granules + 1 tbsp water


    1. Get all the refrigerated ingredients out before making. Preheat the oven to gas 4. Combine the coffee granules and water and set aside to cool.
    2. Cream together the butter and sugar with an eletric hand whisk then add the flour, milk and egg. Beat everything togther on a low setting until combined, but do not over mix or the cakes will become dense!. stir in the cool coffee until combined with the other ingredients. Spoon the mixture into cupcake cases and bake for 20 minutes or until springy to the touch and a skewer comes out clean. Cool on a cooling rack before icing
    3. For both the types of icing simply combine all the ingredients together and beat using an electric hand whisk.
    4. Grate a little milk chocolate on the mascarpone icing for extra sweetness!

I used white granulated sugar instead of golden castor sugar for the cupcakes. I also used only 40g butter (instead of 80gr) and added 125g icing sugar to the coffee butter cream icing. I baked for 22mins. It made 9 cupcakes. They were light textured and tasted delicious. I will bake them again. :-)
