For the Chicken

  • 4 chicken breasts sliced
  • 2tbsp sour cream
  • 1tbsp cajun spice mix

For the salad

  • 1 skinned chopped mango
  • 1 bag fresh baby leaf salad
  • 10g fresh chopped coriander
  • 2 spring onions sliced
  • 1 red onion sliced
  • 1tsp lime juice

Method

  • step 1

    mix sliced chicken sour cream and cajun spices and grill on relatively high heat for 15 mins turning occasionally.
  • step 2

    Whilst the chicken grills chop onions and wash salad. Chop mango and coriander and mix salad together with a little lime juice.
  • step 3

    Once Chicken is grilled slice and mix in with salad for a warm chicken salad with a spicy kick.
