Spicy butternut squash soup

Low in fat, but tastes delightfully creamy. A wonderful soup for dinner parties.

  • 1 butternut squash, peeled and diced
  • 1 red onion, chopped
  • 2 sticks of celery
  • an OXO indian cube or 1 tsp indian curry powder
  • water
  • To make it extra special:
  • 2 tbsp peanut butter


    1. put all the ingredients in the pot, bring to boil, then simmer for 20 mins
    2. blend the soup in a blender, dilute to taste
    3. if making the soup extra special, add the peanut butter in the blender
    4. Bring back to boil, and serve

Was very light and easy to make but a bit on the bland side, really could do with a lot more spice.
