Spicy butternut squash soup

Low in fat, but tastes delightfully creamy. A wonderful soup for dinner parties.

Ingredients

  • 1 butternut squash, peeled and diced
  • 1 red onion, chopped
  • 2 sticks of celery
  • an OXO indian cube or 1 tsp indian curry powder
  • water

To make it extra special:

  • 2 tbsp peanut butter

Method

  • STEP 1
    put all the ingredients in the pot, bring to boil, then simmer for 20 mins
  • STEP 2
    blend the soup in a blender, dilute to taste
  • STEP 3
    if making the soup extra special, add the peanut butter in the blender
  • STEP 4
    Bring back to boil, and serve
