  • 25g Butter
  • 25g Plain flour
  • 250ml Milk
  • Nutmeg
  • Salt and pepper
  • 75g Grated strong cheddar cheese
  • 1 Small tin of sweetcorn
  • 6 Florets of Cauliflower
  • 6 Florets of Broccoli
  • 100g Macaroni
  • Equipment
  • 3x Saucepans
  • Sharp knife
  • Whisk

  • Sieve / Collander

Method

  • step 1

    Bring a pan of water to the boil and add macaroni. Bring back to the boil and simmer for 10 minutes. When cooked place in a colander to drain
  • step 2

    Then bring another saucepan of water to the boil. Add cauliflower, bring back to the boil for 3 minutes. Add Broccoli, return to the boil and simmer for 4 minutes
  • step 3

    Meanwhile put Butter, Flour, Milk, Salt, Pepper and grated nutmeg into a non-stick saucepan. Put on a medium heat and whisk continuously until heated and thickened. Stir in grated cheese and drained tin of sweetcorn. Cook over a low heat until cheese melted, sweetcorn heated and sauce cooked.

    Drain vegetables, put in a serving bowl and stir in sauce.
  • step 5

    Sprinkle with grated cheese and put under the grill until cheese is bubbling.
