- 1 chopped onion
- 2 garlic cloves
- 200g diced courgettes
- 3 chopped tomatoes
- 600ml veg stock
- 2 tbsp pesto
- 1 can cannelini beans drained and rinsed
- 100g mixed veg
- 25g parmesan grated to serve

heat oil an fry onion and garlic until softened add courgettes and tomatoes and cook for 4 mins add: 1tbsp pesto,beans, veg stock, veg and season cook for a few mins cook until courgettes tender when cooked ladel into bowls and top with pesto and cheese
