Ingredients

  • olive oil
  • 1 chopped onion
  • 2 garlic cloves
  • 200g diced courgettes
  • 3 chopped tomatoes
  • 600ml veg stock
  • 2 tbsp pesto
  • 1 can cannelini beans drained and rinsed
  • 100g mixed veg
  • 25g parmesan grated to serve

Method

  1. heat oil an fry onion and garlic until softened add courgettes and tomatoes and cook for 4 mins add: 1tbsp pesto,beans, veg stock, veg and season cook for a few mins cook until courgettes tender when cooked ladel into bowls and top with pesto and cheese
