Ingredients

  • 225g runner beans cut into fine slivers
  • 50g streaky bacon (cut into chunks)
  • 1tbsp sherry/white wine vinegar
  • 2tbsp extra virgin oil
  • 1/2 tbsp wholegrain mustard
  • 70g cherry tomatoes halved

Method

  • STEP 1
    blanch runner beans in boiling water for 3 minutes then drain and cool under running water heat a frying pan and add the bacon and cook until crisp - remove and set aside stir the vinegar and oil in the pan and warm pour the warm dressing over the beans toss in the tomatoes, season and add the bacon serve
