Ingredients
- 100g butter
- 100g sugar
- 2 large eggs
- 175 SR flour
- 5 tbsp coconut milk + extra to taste
- 2 tbsp dessicated coconut
- 100g cut glace cherries
- 1/2 tsp vanilla extract
Method
- STEP 1preheat oven to 180 degrees fan assisted line muffin tin
- STEP 2beat butter and sugar until fluffy and creamy Add eggs little by little Fold in flour and dessicated coconut Add milk and vanilla extract stir in cherries
- STEP 3Spoon into cases bake for around 20 mins
