Cherry and dessicated coconut with coconut milk

  • 100g butter
  • 100g sugar
  • 2 large eggs
  • 175 SR flour
  • 5 tbsp coconut milk + extra to taste
  • 2 tbsp dessicated coconut
  • 100g cut glace cherries
  • 1/2 tsp vanilla extract


  1. preheat oven to 180 degrees fan assisted line muffin tin

  2. beat butter and sugar until fluffy and creamy Add eggs little by little Fold in flour and dessicated coconut Add milk and vanilla extract stir in cherries

  3. Spoon into cases bake for around 20 mins
