Cherry and coconut cupcakes

Cherry and dessicated coconut with coconut milk


  • 100g butter
  • 100g sugar
  • 2 large eggs
  • 175 SR flour
  • 5 tbsp coconut milk + extra to taste
  • 2 tbsp dessicated coconut
  • 100g cut glace cherries
  • 1/2 tsp vanilla extract


  • STEP 1
    preheat oven to 180 degrees fan assisted line muffin tin
  • STEP 2
    beat butter and sugar until fluffy and creamy Add eggs little by little Fold in flour and dessicated coconut Add milk and vanilla extract stir in cherries
  • STEP 3
    Spoon into cases bake for around 20 mins
