  1. Add the dry ingredients to a mixing bowl. Beat the egg and milk into the mixture with a handheld or electric whisk. Heat a non-stick frying pan over a medium heat and add some oil.

  2. Spoon in a small ladleful of batter to make a pancake about 10cm across. Fry for about 1 min until the edges of the pancake are firm and bubbles have started to appear on the surface. Turn over and fry for another 30 secs till golden on both sides. Serve with your favourite toppings.

Absolutely brilliant recipe! I usually make the American Blueberry ones or the Apple and Cranberry ones which are also on this site (and are also great), but this is my new favourite and will be my go-to from now on. The pan needs to be a bit hotter than for American pancakes, and once I'd figured out not to flip them until the bubbles on the top had 'set', I was flying! Considering how easy it is, it gave me a really professional-looking finish with a fluffy texture - they honestly looked like I'd bought them!
