Ingredients

  • 250g tuna steak, cubed
  • ý tbsp olive oil
  • 1 tbsp rice vinegar
  • 1 tbsp fresh ginger, diced
  • 1 garlic clove, crushed
  • 1 tbsp peanut butter
  • 250ml fish stock
  • ý tbsp soy sauce
  • ý tbsp chilli sauce
  • Juice of 1 lime
  • ý bag of mixed stir fry veg
  • 200g egg noodles

Method

  • STEP 1
    1. Cook ginger and garlic for 1 min in pan, add peanut butter, fish stock and soy sauce and simmer for 10 mins
  • STEP 2
    2. Add lime juice and chilli sauce and remove from heat
  • STEP 3
    3. Thread tuna cubes onto skewers and heat for 4 mins on grill pan, turning halfway
  • STEP 4
    4. Fry veg for 2 mins on medium heat
  • STEP 5
    5. Cook the egg noodles
  • STEP 6
    6. serve
