Ingredients
- 250g tuna steak, cubed
- ý tbsp olive oil
- 1 tbsp rice vinegar
- 1 tbsp fresh ginger, diced
- 1 garlic clove, crushed
- 1 tbsp peanut butter
- 250ml fish stock
- ý tbsp soy sauce
- ý tbsp chilli sauce
- Juice of 1 lime
- ý bag of mixed stir fry veg
- 200g egg noodles
Method
- STEP 11. Cook ginger and garlic for 1 min in pan, add peanut butter, fish stock and soy sauce and simmer for 10 mins
- STEP 22. Add lime juice and chilli sauce and remove from heat
- STEP 33. Thread tuna cubes onto skewers and heat for 4 mins on grill pan, turning halfway
- STEP 44. Fry veg for 2 mins on medium heat
- STEP 55. Cook the egg noodles
- STEP 66. serve
