Pasta with eggs, bacon, tomatoes and sausages

  • 2 Pork sausages, cut into chunks
  • 6 streaky bacon rashers, quartered
  • 1 onion, sliced
  • 6 medium tomatoes, quartered
  • 2 eggs
  • 50g garlic and herb philadelphia
  • 50g half fat cheddar, grated
  • 100g button or chestnut mushrooms, quartered
  • 100g wholemeal fusilli


    1. Boil the fusilli as per the packet instructions
    2. Fry the onion, sausage and bacon for 5 minutes
    3. add the mushroom quarters and fry for a further 5 minutes
    4. add the tomatoes and continue to fry for a further 10 minutes
    5. Beat the eggs and philladelphia until smooth
    6. Drain the pasta
    7. Add the pasta to the meat and vegetable sauce and stir through
    8. Add the egg mixture to the dish and stir through
    9. Finally add the cheddar and serve with a green salad and or garlic bread
