Ingredients
- 1 leek
- 1 tbsp olive oil
- 250ml veg stock
- 2 tbsp whole grain mustard
- 140g smoked mackerel
- 200g pasta shapes
Method
- STEP 1Cook pasta following packet instructions.
- STEP 2Fry thinly sliced leek in olive oil for 5-10 mins until soft then stir in 250ml hot veg stock and mustard.
- STEP 3Bring to a simmer while flaking in smoked mackerel then stir through pasta.
