Ingredients

  • 1 leek
  • 1 tbsp olive oil
  • 250ml veg stock
  • 2 tbsp whole grain mustard
  • 140g smoked mackerel
  • 200g pasta shapes

Method

  • STEP 1
    Cook pasta following packet instructions.
  • STEP 2
    Fry thinly sliced leek in olive oil for 5-10 mins until soft then stir in 250ml hot veg stock and mustard.
  • STEP 3
    Bring to a simmer while flaking in smoked mackerel then stir through pasta.
