Healthy breakfast flapjack

Very easy and healthy alternative to flapjack, perfect for breakfast or as a snack


  • Bananas, chopped into very small pieces
  • 2tbsp of smooth peanut butter per banana used
  • Muesli or porridge oats
  • Dried fruit
  • Flaked almonds or other nuts (optional)


  • STEP 1
    Preheat oven to 180 degrees Celsius on fan
  • STEP 2
    Line a baking tray with grease proof paper
  • STEP 3
    Put the chopped bananas into a saucepan on the hob on a low heat
  • STEP 4
    Once the banana has turned to a slight paste, make a well and add the peanut butter
  • STEP 5
    Once the peanut butter has melted stir the mixture and add the desired amount of oats and/ or muesli and dried fruit. ( the mixture may clump, but this does not matter)
  • STEP 6
    Take the saucepan off the heat and put the mixture into the baking tray, pressing down with a spoon or spatula
  • STEP 7
    Sprinkle with flaked almonds or chopped nuts if desired and put in the oven for 10 to 15 minutes or until the mixture is firm and the nuts are lightly browned
