Decorations
- 220g self-raising flour (sifted)
- 2 teaspoons baking powder
- 220g soft butter or marg
- 220g caster sugar
- 4 eggs
- 3 tablespoons cocoa powder
- Butter (for greasing)
- One packet marshmallows
- I cheated and used shop bought vanilla frosting (2 tubs)
- 2 different food colourings
- tiny bit of sunflower oil
- lego figures (optional)
- I used flapjacks and rice krispy squares for people who didn't like cake (optional)
Method
- STEP 1Preheat the oven to 170C and butter (generously) 2 loaf tins.
- STEP 2Sift the flour and baking powder into a bowl and then add the rest of the ingredients and empty into a magimix or use an electric handwhisk (you can do it by hand but I couldn't be bothered!)
- STEP 3When it is all combined, simply divide into the two loaf tins and bake for around 30 minutes.
- STEP 4Leave on a cooling rack (you can only start icing when it is completely cool.)
- STEP 5Get a pair of clean scissors and rub with a small amount of sunflower oil (this will make the marshmallows not stick)
- STEP 6Cut 16 marshmallows into half, you will only be using the bottom half of each of the marshmallows.
- STEP 7Now mix the food colouring into the icing (obviously 2 seperate bowls for the 2 colours) Ice the cake and then ice the marshmallows and place on top.
- STEP 8Add candles and lego figures. I used some flapjacks and chocolate rice crispy squares for the people at the party who didn't like cake.
