Ingredients

Cake (you can make any kind of cake really but I used chocolate)

  • 220g self-raising flour (sifted)
  • 2 teaspoons baking powder
  • 220g soft butter or marg
  • 220g caster sugar
  • 4 eggs
  • 3 tablespoons cocoa powder
  • Butter (for greasing)

Decorations

  • One packet marshmallows
  • I cheated and used shop bought vanilla frosting (2 tubs)
  • 2 different food colourings
  • tiny bit of sunflower oil
  • lego figures (optional)
  • I used flapjacks and rice krispy squares for people who didn't like cake (optional)

Method

  1. Preheat the oven to 170C and butter (generously) 2 loaf tins.

  2. Sift the flour and baking powder into a bowl and then add the rest of the ingredients and empty into a magimix or use an electric handwhisk (you can do it by hand but I couldn't be bothered!)

  3. When it is all combined, simply divide into the two loaf tins and bake for around 30 minutes.

  4. Leave on a cooling rack (you can only start icing when it is completely cool.)

  5. Get a pair of clean scissors and rub with a small amount of sunflower oil (this will make the marshmallows not stick)

  6. Cut 16 marshmallows into half, you will only be using the bottom half of each of the marshmallows.

  7. Now mix the food colouring into the icing (obviously 2 seperate bowls for the 2 colours) Ice the cake and then ice the marshmallows and place on top.

  8. Add candles and lego figures. I used some flapjacks and chocolate rice crispy squares for the people at the party who didn't like cake.
