Ingredients

  • 1/3 or 1/2 pack pork mice
  • 1 or 2 aubergines
  • 1/2 bunch spring onions
  • 2 garlic cloves
  • ginger
  • 2 tsp sugar
  • 2 tsp Chinese chicken stock
  • 2 tbsp soy sauce
  • 1 tbsp cooking sake
  • tiny bit of chilli paste
  • 2 tsp potato starch

Method

  • STEP 1
    Fry finely chopped ginger and crushed garlic.
  • STEP 2
    Fry pork, until browned, breaking it up as you go.
  • STEP 3
    Add around 200 ml of water, then the chicken stock, then the sugar, sake and soy sauce.
  • STEP 4
    Add the peeled, chopped and boiled aubergine.
  • STEP 5
    Simmer for 10 minutes.
  • STEP 6
    Add the potato starch and water mixture, and simmer until thickened.
