Pork Mince and Aubergine

Ingredients
- 1/3 or 1/2 pack pork mice
- 1 or 2 aubergines
- 1/2 bunch spring onions
- 2 garlic cloves
- ginger
- 2 tsp sugar
- 2 tsp Chinese chicken stock
- 2 tbsp soy sauce
- 1 tbsp cooking sake
- tiny bit of chilli paste
- 2 tsp potato starch
Method
- STEP 1Fry finely chopped ginger and crushed garlic.
- STEP 2Fry pork, until browned, breaking it up as you go.
- STEP 3Add around 200 ml of water, then the chicken stock, then the sugar, sake and soy sauce.
- STEP 4Add the peeled, chopped and boiled aubergine.
- STEP 5Simmer for 10 minutes.
- STEP 6Add the potato starch and water mixture, and simmer until thickened.
