  • 1/3 or 1/2 pack pork mice
  • 1 or 2 aubergines
  • 1/2 bunch spring onions
  • 2 garlic cloves
  • ginger
  • 2 tsp sugar
  • 2 tsp Chinese chicken stock
  • 2 tbsp soy sauce
  • 1 tbsp cooking sake
  • tiny bit of chilli paste
  • 2 tsp potato starch


  1. Fry finely chopped ginger and crushed garlic.

  2. Fry pork, until browned, breaking it up as you go.

  3. Add around 200 ml of water, then the chicken stock, then the sugar, sake and soy sauce.

  4. Add the peeled, chopped and boiled aubergine.

  5. Simmer for 10 minutes.

  6. Add the potato starch and water mixture, and simmer until thickened.
