Mango and Cucumber Salsa

- 2 large mangoes
- 1 red onion diced
- 1/2 cucumber seeded and diced
- juice of 4 limes
- 1 red chilli finely chopped
- Handful of chopped mint leaves
Method
step 1
Peel and chop the mangoes and tip into a bowl. Add the diced red onion and cucumber. Tip in the lime juice and the chopped red chilli. Also add the chopped or torn mint leavesstep 2
Season with salt and pepper and mix well. Leave for 2hrs in fridge before serving
