
Blueberry Pancakes

Ingredients
Dry Ingredients,
- 250g all-purpose flour
- 1/2 tsp salt
- 1/2 tsp baking powder
- 2 Tbsp sugar
- 1/2 tsp baking soda
Wet Ingredients,
- 250g all-purpose flour
- 1/2 tsp salt
- 1/2 tsp baking powder
- 2 Tbsp sugar
- 1/2 tsp baking soda
- 2 large eggs
- 240ml milk
- 120ml buttermilk
- 150g blueberries
- maple syrup, butter and blueberries fo serving
Method
- STEP 1Whisk all the dry ingredients in a large bowl and set aside. In a separate bowl, whisk the eggs, milk and buttermilk.
- STEP 2Pour the wet ingredients into the dry ingredients and combine until the mixture comes together. Stir in the melted butter. Do not over-mix. The mixture should be a little lumpy. Heat an electric griddle or frying pan over a medium heat and coat with cooking spray.
- STEP 3Using a small ladle or scoop, pour pancake mixture onto the pan. Sprinkle blueberries evenly on top of the pancakes. Cook for 2-3 minutes or until bubbles appear around the edgesand pancake is golden brown underneath. Carefully turn over and cook for a further 2-3 minutes or until golden brown on the bottom.
- STEP 4Remove pancake from the pan and repeat the same process until the mixture runs out. Serve warm with maple syrup, butter and blueberries.
