Dry Ingredients,

  • 250g all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 2 Tbsp sugar
  • 1/2 tsp baking soda

Wet Ingredients,

  • 250g all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 2 Tbsp sugar
  • 1/2 tsp baking soda
  • 2 large eggs
  • 240ml milk
  • 120ml buttermilk
  • 150g blueberries
  • maple syrup, butter and blueberries fo serving

    Method

    • step 1

      Whisk all the dry ingredients in a large bowl and set aside. In a separate bowl, whisk the eggs, milk and buttermilk.
    • step 2

      Pour the wet ingredients into the dry ingredients and combine until the mixture comes together. Stir in the melted butter. Do not over-mix. The mixture should be a little lumpy. Heat an electric griddle or frying pan over a medium heat and coat with cooking spray.
    • step 3

      Using a small ladle or scoop, pour pancake mixture onto the pan. Sprinkle blueberries evenly on top of the pancakes. Cook for 2-3 minutes or until bubbles appear around the edgesand pancake is golden brown underneath. Carefully turn over and cook for a further 2-3 minutes or until golden brown on the bottom.
    • step 4

      Remove pancake from the pan and repeat the same process until the mixture runs out. Serve warm with maple syrup, butter and blueberries.
