Yummy, fluffy pancakes served with maple syrup and blueberries. Enjoy!

Dry Ingredients,

  • 250g all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 2 Tbsp sugar
  • 1/2 tsp baking soda

Wet Ingredients,

  • 2 large eggs
  • 240ml milk
  • 120ml buttermilk
  • 150g blueberries
  • maple syrup, butter and blueberries fo serving


  1. Whisk all the dry ingredients in a large bowl and set aside. In a separate bowl, whisk the eggs, milk and buttermilk.

  2. Pour the wet ingredients into the dry ingredients and combine until the mixture comes together. Stir in the melted butter. Do not over-mix. The mixture should be a little lumpy. Heat an electric griddle or frying pan over a medium heat and coat with cooking spray.

  3. Using a small ladle or scoop, pour pancake mixture onto the pan. Sprinkle blueberries evenly on top of the pancakes. Cook for 2-3 minutes or until bubbles appear around the edgesand pancake is golden brown underneath. Carefully turn over and cook for a further 2-3 minutes or until golden brown on the bottom.

  4. Remove pancake from the pan and repeat the same process until the mixture runs out. Serve warm with maple syrup, butter and blueberries.
