A nice quick simple and tasty satisfying soup perfect for those winter nights

  • 3 litres of vegetable stock ( i use 4 knorr stock cubes as i like plenty of flavour)
  • 4 large carrots, grated
  • 4 medium potatoes, diced
  • 4 leeks, chopped
  • 1 medium onion, chopped
  • 250g red split lentils
  • salt and pepper to taste


    1. fill a large stock pot with around 3litres of water and bring to the boil. Add 4 knorr vegetable stock cubes and simmer whilst stirring
    2. add the lentils
    3. Dice the potatoes, leeks and onion and add to the pot
    4. grate the carrots and add to the pot and season with salt and pepper if you wish
    5. simmer the soup for around 2hours stirring occasionally and once the potatoes are cooked the soup is ready

Made this soup today and it is totally delicious! Because I have herbs I added thyme, rosemary, basil (just a bit of each) and a bay leaf. I also blended 1/3 of the soup in my blender, at the end and put it back in the pot which gave it a nice smooth consistency.

this is my favourite soup ever been making it for years even have to make extra pots for workmates and family
