  • 2 tbsp vegetable oil
  • 1/2 cube vegetable stock
  • 500ml boiling water
  • 1/2 clove of garlic
  • 1/2 tsp chilli powder
  • 1/2 tsp cumin
  • grating of fresh ginger
  • 1 onion
  • salt & pepper to taste

    Method

    • step 1

      Place oil, onion, chilli power, cumin, garlic and ginger into a large fan and cook until onion browns
    • step 2

      chop parsnips and potatoes into chunks and place in pan with the spices and onion
    • step 3

      add stock and let simmer for 1 hour
    • step 4

      blend until smooth and add salt and pepper to taste, serve with crusty bread

    How much potato and parsnips?

    No mention of the parsnips or potatoes! Any other soup I'd just use whatever but parsnip is sweet so would be handy to know a suggested quantity

    Missing is quantity of potato and parsnip from ingredients. Not a bother to me, but others may find useful.....or maybe it’s just my phone. I was making mash so I used the chunky potato peelings in this to be more sustainable. Let you know how it turns out
