Ingredients

  • 100g black beans (uncooked weight)
  • 100g quinoa (uncooked weight)
  • spinach
  • spelt burrito wraps

Guacamole

  • 100g black beans (uncooked weight)
  • 100g quinoa (uncooked weight)
  • spinach
  • spelt burrito wraps
  • 2 avocado
  • coriander
  • red jalepeno pepper
  • lime juice
  • 1 clove of garlic

Salsa

  • 100g black beans (uncooked weight)
  • 100g quinoa (uncooked weight)
  • spinach
  • spelt burrito wraps
  • 2 avocado
  • coriander
  • red jalepeno pepper
  • lime juice
  • 1 clove of garlic
  • 3 tomatoes
  • fresh parsley
  • coriander
  • red onion
  • pink salt
  • olive oil
  • apple cider vinegar
  • sesame seeds

Method

  • STEP 1
    Cook the black beans and quinoa. Black beans will need to be precooked so hopefully you only need to heat these up when you make the meal.
  • STEP 2
    Add the ingredients for the guacamole to a blender and blend for about 5 seconds so it is still a little chunky.
  • STEP 3
    Chop the tomatoes, parsley, coriander and red onion and mix in a bowl. Add the rest of the ingredients for the salsa to the bowl and mix well.
  • STEP 4
    Serve with spinach.
