• Chicken breasts
  • Coconut milk
  • Potatoes
  • Carrots
  • Green beans
  • Red thai curry paste
  • Rice


  • STEP 1
    Cut up the chicken breasts into chunks
  • STEP 2
    Peel and cut up the potatoes and carrots into cubes
  • STEP 3
    Cook the green beans but not to much as you want them to have a bit of crunch in them then run under cold water so they keep their colour
  • STEP 4
    Then put the coconut milk into a large pan, then add all the ingredients accept the green beans and simmer until the chicken is cooked about 20 mins
  • STEP 5
    While the chicken is simmering cook your rice and drain well
  • STEP 6
    When the chicken is cooked add the green beans at the end to warm and then serve on top of the rice
