  • Chicken breasts
  • Coconut milk
  • Potatoes
  • Carrots
  • Green beans
  • Red thai curry paste
  • Rice


  1. Cut up the chicken breasts into chunks

  2. Peel and cut up the potatoes and carrots into cubes

  3. Cook the green beans but not to much as you want them to have a bit of crunch in them then run under cold water so they keep their colour

  4. Then put the coconut milk into a large pan, then add all the ingredients accept the green beans and simmer until the chicken is cooked about 20 mins

  5. While the chicken is simmering cook your rice and drain well

  6. When the chicken is cooked add the green beans at the end to warm and then serve on top of the rice
