- Chicken breasts
- Coconut milk
- Potatoes
- Carrots
- Green beans
- Red thai curry paste
- Rice
Method
- STEP 1Cut up the chicken breasts into chunks
- STEP 2Peel and cut up the potatoes and carrots into cubes
- STEP 3Cook the green beans but not to much as you want them to have a bit of crunch in them then run under cold water so they keep their colour
- STEP 4Then put the coconut milk into a large pan, then add all the ingredients accept the green beans and simmer until the chicken is cooked about 20 mins
- STEP 5While the chicken is simmering cook your rice and drain well
- STEP 6When the chicken is cooked add the green beans at the end to warm and then serve on top of the rice
